All of last I week I had been eating salads every day for lunch. I have never ‘invented’ so many ideas in my life!! I was using left over vegetables from the night before, then moved on to actually boiling the veggies and mixing them with raw vegetables like tomatoes, cannelloni beans, etc. The classic was having two types of potatoes – sweet & regular mixed in with boiled cabbage, celery & carrots mixed with light mayo. It actually turned out to be a very tasty meal. Well, it just goes to show that you don’t always have to follow a recipe or stick to the same old stuff, I believe it is called thinking outside the box or making the best of what you have in your cupboard/fridge.
This is what is so exciting about been able the healthy lifestyle, once you have discovered the foods you can eat minus the high calories, the sky is the limit.
